P355 ORACLE 355 Sun17 Oct ITV 2210:01       IN AT 2/3       THE       WEEKEND CHICKEN CASSEROLE DE LUXE (serves 4) 3\ lb roasting CHICKEN; 1 oz BUTTER; 3 tbs SWEET SHERRY; 1 ONION; 4 rashers STREAKY BACON; 2 level tbs FLOUR; \ pt CHICKEN STOCK;2oz RAISINS;4oz MUSHROOMS Joint chicken. Heat fat in pan and fry joints lightly until brown all over, then place in casserole dish. Add chopped onion & bacon to pan; fry gently for 10 mins.until onion is soft. Add to dish. Stir flour into pan with stock, sherry & seasoning. Bring to boil and pour over chicken. Cover and cook in moderate oven for 45 mins. Add mushrooms and raisins and cook for a further 10 mins. P355 ORACLE 355 Sun17 Oct ITV 2200:01       IN AT 3/3       THE       WEEKEND CHOCOLATE & BANANA TREAT 6 oz plain chocolate DIGESTIVES; 1\ oz BUTTER; 1\ tsps GOLDEN SYRUP;1 packet INSTANT DESSERT MIX, BANANA flavour; \ pt MILK (for mix); 1 CHOCOLATE FLAKE. Finely crush biscuits & place in bowl. Melt butter and syrup and stir into bowl. Press mixture into 8" shallow tin and leave in fridge for 20 mins. Make up dessert mix as directed on the packet and spoon into flan. Crumble chocolate flake over the top,and serve. Starter & Main Course follow >
P355 ORACLE 355 Sun17 Oct ITV 2210:00       IN AT 1/3       THE       WEEKEND ORANGE AND TOMATO SOUP (serves 4) 2 lb TOMATOES; 1 ONION; 2 pts CHICKEN STOCK; 1\oz BUTTER; 1\oz PLAIN FLOUR; 1 ORANGE; 2 level tbs TOMATO PUREE. Halve tomatoes; remove pips into sieve, reserving juice. Put tomatoes and juice into pan with sliced onion, stock and seasoning. Peel rind thinly from one half of orange and add to pan. Bring liquid to boil, lower heat, cover and simmer for 30 mins. Rub soup through nylon sieve into bowl. Melt butter in pan, blend in flour and slowly add soup Mix in puree, bring to boil then add juice from orange.
