Ingredients 675g (1\lb) British braising steak, cubed. 1x15ml sp(1tbs—2 oil. 2 onions, chopped.2 cloves garlic, crushed. 2.5cm (1") root ginger,grated. 3x15ml sp (3tbsp) curry paste. 397g (14oz) can chopped tomatoes.150ml ({pt) stock. 175g (6ox( frozen spinach,thawed & drained. Salt & black pepper. 2x15ml sp (2tbsp) fresh coriander, chopped. Method Heat oil in a large pan. Cook onions, garlic & ginger until softened. Add curry paste,cook for 1-2 mins. Add meat, cook qntil browned. Stir in stock tomatoes, spinach & seasoning. Cover & simmer for 1\ hrs,stirring occasionally Simmer for further 30 lins or until the meat is tender. Stir in coriander. Temp: Gas mk 4/5, 180c, 350f. Ingredients 1.25kg (2\lb) British beef joint (rib/sirloin/topside), 1 x 15ml sp (1 tbsp) oil, 4 potatoes, 4 carrots, 2 parsnips, 2 leeks, trimmed & cut into chunks, 2 x 15ml sp (2 tbsp mustard, 1 x 15ml sp (1 tbsp oil). Method Place oil in roasting tin,add vegetables. Weigh joint and calculate cooking time. Place joint on rack over vegetables and open roast in preheated oven turning vegetables occasionally. 30 mins before end of cooking time mix mustard & oil & brush over beef. Return to oven.
